Strawberries and ginger Jam

Isn’t it lovely to wander round the beautiful market towns at this time of year and smell the sweet scent of strawberries….
This is how it started!!!!!!!!
I brought home an entire box of strawberries at a cost of € 3. I was so proud of myself that I sent a picture to my sister,  who had gone out with my family for whatever reason I do not remember.
In response she sends a picture of a box of strawberries at her side and another full box in the car.  Oh well!!!!
The moral of the story is simple….. If you have an uncontrollable urge to buy an entire box of strawberries, make sure that your family do not have the same urge that you find yourself inundated with strawberries……. Make jam.
Now we change to a subject that may make most people turn up their noses!
The usual jams that take hours to cook taste far too sweet and that is why I don’t eat them.  For others like me that do not like these sugary jams,  I confess that I use sachets of Pectin.  If you do not like it this way, make it the original way increasing the amount of sugar and omitting the pectin.
I prefer my method as you can taste the flavour of the fruit and it takes less time to make etc etc etc
I’ll now explain how I make it my way.

Strawberries and ginger Jam
Recipe Type: Dessert

Ingredients
  • 1kg 200grams of strawberries
  • 550g sugar
  • Grated rind of 1 Lemon
  • 6cm grated fresh ginger
  • 1 sachet of pectin 2:1
Instructions
  1. Wash and dry the strawberries
  2. Cut the fruit into small pieces
  3. Grate the zest of a lemon and ginger root
  4. Combine all the ingredients in a large pot and add the pectin
  5. Mix well and when the mixture reaches the boil cook for 25 minutes
  6. Put the Jam into sterilized jars. Seal them and let them cool upside down covered with a cloth.
Why add the ginger? Do you not like plain strawberry jam enough?
If I told you that I think I am very cool because I’ve got this blog?  Not really;  I will tell you that I really like the taste of this root. I find it suitable for many dishes both savoury and sweet.  In this case it gives a fresh and spicy note. In my opinion with strawberries it is amazing!!  Also ginger appears to have an antioxidant and anti inflammatory factor.  In some Asian countries it is used to treat influenza and colds as well as pain. Especially for headaches and toothaches.  It helps peripheral circulation and is anticoaculant, especially in China it is used as a tonic to combat fatigue.
Even strawberries are known for their healing properties.  In fact they have a very high antioxidant power that exceeds 20 times that of other foods and a richer content of vitamin C than citrus fruits (vitamin C helps keep us young). It is also rich in calcium, iron and magnesium and is recommended to those suffering from rheumatism and colds. It is particularly to combat cholesterol.  The salicylic acid contained in them helps to keep blood pressure under control and the blood flow.  Strawberries are also a good source of ellagic acid which is an effective anti cancer property.  They are also refreshing, diuretic, purifying and detoxifying. Finally they contain xylitol, a Sweet substance that prevents the formation of dental plaque and kills germs responsible for bad breath. Therefore everyone buy ginger and strawberries!!!
